NANDU JUBANY

Nandu Jubany is a renowned Catalan chef, recognized for his high-quality cuisine, which combines traditional roots with innovative touches. His cooking, based on local produce and technical excellence, has established him as one of the great references in contemporary Catalan gastronomy. Owner of the restaurant Can Jubany, awarded a Michelin star since 1998, he has expanded his gastronomic universe with projects such as PUR, Can Carlitos and Pecador in Formentera, Es Còdol Foradat also in Formentera, Diamant in Andorra, and Hincha present in Leo Messi's MIM hotels in Andorra, Baqueira and soon in Sotogrande.

Tribute to the most precious gastronomic gem

The ultimate inspiration came to me from one of the most prized gems of our gastronomy, "The Diamond of the Earth," the truffle.

Although my creative vision always starts with nature and garden produce, it was this treasure of the earth that stood out as the true gem.

The truffle not only represents gastronomic excellence: it also symbolizes the link to the land, the generosity of the earth, and the relationship with the products that surround it.

In my kitchen, the truffle has offered a lot, and making it the motif of my design is a way of paying homage to it.

For Union Suiza's 185th-anniversary competition, the truffle thus transforms into a culinary diamond, the undisputed queen of its creative universe, and the perfect metaphor for what a jewel represents.
